This yeast leavened overnight waffle recipe is mixed up the night before and stored in the fridge, ready to make fresh waffles in the morning with next to no effort required! It takes 5 minutes to mix up the batter and it is all made in one bowl.

As our kids are getting older, they are starting to become more aware of the days of the week and what that means. Sadie now knows that on weekend mornings, Dad doesn't leave for work which means slow mornings with cartoons in bed and waffles!

We have always made regular buttermilk waffles for special occasions such as birthdays and holidays but lately I've been mixing up this overnight waffle recipe and having it ready to go for Saturday morning. We think that weekend mornings at home with the family are worth celebrating with a special breakfast too! Especially when it includes a bottomless cup of coffee for Mum & Dad, complete with homemade French vanilla coffee creamer!

Ingredients

A very basic list of pantry staple ingredients that come together to create the most delicious overnight waffle recipe!

  • Yeast - the key ingredient in these waffles! You can use active dry yeast or instant yeast. If using Surebake or breadmaker yeast, you will need to double the quantity specified in the recipe card.
  • Warm milk - this helps to activate the yeast before it sits in the fridge overnight.

Combine all ingredients in a large mixing bowl. It doesn't matter if there are a few lumps.

Cover the bowl and place in the fridge overnight. In the morning, give the batter a quick mix and then cook as per your waffle maker instructions.

Hint: use the biggest bowl you have as the batter will rise in the fridge overnight and increase in volume by about 50%, so you want to avoid overflow!

Toppings

We like to keep the waffle batter plain and allow everyone to add their favourite toppings. Here are some suggestions:

  • Whipped cream
  • Yoghurt
  • Maple syrup
  • Chocolate chips
  • Fresh fruit e.g. mangoes, berries, sliced bananas
  • Bottled fruit such as home preserved peaches
  • A quick berry sauce made by cooking 1 cup frozen berries with 2 Tablespoons of water until hot (either on the stove or in the microwave), and stirring through 1 teaspoon cornflour mixed with 1 Tablespoon of water and cooking for a couple more minutes until thickened.
  • Sprinkles (we always have sprinkle waffles on birthdays!)

To freeze

This recipe makes enough waffles for a family of 4 (about 8 waffles). You can easily double it and have extras - I like freezing any leftover waffles to pull out and pop in the toaster or microwave for a quick breakfast or snack!

To freeze waffles, stack them with a piece of baking paper in between each waffle and place in a freezer container or snaplock bag. You can then remove one waffle at a time as you need them. They will keep in the freezer for 3 months.

Top Tips

This overnight waffle recipe can also be used to make pancakes if you don't have a waffle maker! Just follow the instructions as per the recipe but instead of heating the waffle iron, heat a frying pan over a low/medium heat, grease with butter or cooking spray and pour ¼ cup batter in to make a pancake, cooking for 1-2 minutes each side until cooked all the way through.

Are the waffles crispy?

They sure are! My waffle maker makes quite thin waffles but if I turn up the heat to just over halfway, I get lovely crispy on the outside waffles!

How far ahead can I mix up the batter?

The batter needs approximately 8 hours to get a good rise but you can mix it up 24 hours before you want to use it and keep it in the fridge.

Can I make pancakes with the same batter?

Absolutely! We have done this very successfully!

Equipment

  • Waffle maker

Ingredients

  • 1 ½ cups warm milk
  • 75 grams butter melted
  • 2 Tablespoons white sugar
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 2 cups plain flour
  • 1 ½ teaspoons active dry or instant yeast

Topping suggestions

  • Whipped cream, yoghurt, maple syrup, chocolate chips, fresh fruit e.g. mangoes, berries, sliced bananas, bottled fruit such as home preserved peaches, berry sauce, sprinkles

Instructions

Night before

  • Combine all ingredients in a large bowl and whisk together until well combined. It is ok if there are a few lumps.

  • Cover the bowl with plastic wrap or a lid and place in the fridge overnight.

Morning of cooking

  • Turn on your waffle maker

  • Remove the batter from the fridge and give it a quick stir.

  • Using ½ cup of batter for each waffle, cook waffles according to directions on your waffle maker. I cook mine for 3-4 minutes so that they are crispy on the outside.

  • Serve immediately with your favourite toppings.

Notes

To freeze waffles: Cool cooked waffles on a wire cooling rack. Stack cooled waffles with a piece of baking paper in between each waffle and place in a freezer proof container or snaplock bag and freeze. They will keep well for 3 months in the freezer.

To re-heat waffles: Remove from freezer and put in the toaster until warm or re-heat in your waffle maker or the microwave.
