Sharing a super easy egg recipe with you all today: cheesy egg toast (otherwise known as “egg in a hole,” “toad in the hole,” “egg in a nest,” “egg in a frame,” or a bunch of other names). Also, why are eggs referred to as “toads,” anyway? What do you call this type of egg recipe?

I’ve never been one to skip breakfast. I can’t understand why anyone would want to. I go to bed thinking about what I’m going to eat in the morning.

And, it’s not like it’s always usually anything fancy, far from it.

Most mornings it’s a bowl of cereal, granola bar or smoothie. Basically, something fast because I don’t have a lot of time. Also, this lady loves her sleep. The struggle is real. Feel me?

Anyhow, for days that you want something a tad more substantial for breakfast, but you really don’t have a whole lot of time, this cheesy egg bread is the answer.

And, bonus, you probably have the ingredients on hand to make! There’s just bread, butter, eggs and cheese. That’s it! Don’t you just love easy egg recipes?

How To Make Egg Toast

Butter your slices of bread on both sides. Use a small drinking glass (or biscuit cutter) and cut out circles (that’s where the eggs will go). Don’t discard those circles. Fry them up with your cheesy egg toast!

Place a couple of mounds of shredded cheddar cheese in a non-stick frying pan.

Place your slices of bread over the cheese, and pour an egg into each hole. Add the centre pieces of the bread to the pan too. Cook until the cheese has melted and the eggs are starting to cook.

Tip: Crack each egg into a small dish or ramekin (one dish per egg) before adding to the pan. That way, you can make sure you don’t get any shells in your eggs before they hit the heat.

Add a little butter to the pan, then flip your egg-in-the-holes (and centre pieces) to cook the other side. Easy, right?

Best Bread To Use

You don’t have to use anything fancy for this egg toast recipe, no artisanal bread or anything.

I just like to use a simple white or whole wheat sandwich bread, essentially something that is soft and that you’d use on a basic sandwich.

Ingredients

  • 2.5 tablespoons butter or margarine, divided
  • 2 slices sandwich bread
  • ½ cup shredded cheddar cheese, about 2 ounces
  • 2 large eggs

Instructions

  • Spread butter (or margarine) on both sides of your slices of bread (about 1 tablespoon of butter or margarine per slice).

  • For each slice of bread, cut out a circle in the middle with a small drinking glass or biscuit cutter.

  • Distribute two mounds of cheddar cheese in a large non-stick frying pan and place over medium-low to medium heat.

  • Add slices of bread over top of cheese mounds, so the cheese is peaking out through the hole of each slice. Also, add the centre bread slices (the bread circles) to the pan.

  • Crack each egg into a small dish or ramekin (one dish per egg).

  • Pour an egg into each hole of the bread.

  • Once the cheese has melted and the eggs are starting to cook (about 1 to 2 minutes), add remaining ½ tablespoon of butter (or margarine) to the pan. Once the butter (or margarine) is melted, flip the bread slices over top to cook the other side. (Don't forget to flip the centre bread pieces as well.) Cook until the egg whites are set (firm) and the yolks are done to your liking. Serve and enjoy!

    Note: If you want cheese on both sides of your bread, add more to the pan and flip your bread on top of or carefully add to your bread and gently flip.
