Ingredients list for the Spicy Peanut Butter Noodles
- 16 ouncesrice noodles (white or brown)
- 3 large cloves of garlic, minced
- 1 tablespoon fresh grated ginger
- 1 tablespoon oliveoil
- 2/3 cup creamy peanut butter
- 4 tablespoons low sodium tamari or soy sauce
- 1/3 to 1 cup hot water
- 1 tablespoon rice vinegar
- 1 tablespoon toasted sesame oil
- 1 tablespoon sriracha
- 1 tablespoon maple syrup or honey
- 1/2 teaspoon red pepper flakes

Peanut Butter Noodles Recipe
These peanut butter noodles are one of these quick recipes you can make with ingredients you probably already have on hand. If you like Asian food in general and Thai food in particular, these rice noodles with their peanut butter sauce will make their way to your meal planner every week!
How to make the spicy peanut butter noodles
Cook the rice noodles on one side, and prepare the sauce in the meantime. Simply sauté garlic and ginger, then add hot water, peanut butter, tamari sauce, rice vinegar, sesame oil, and maple syrup and combine together until smooth. Toos in cooked noodles, divide into bowls and add your favorite toppings: crushed peanuts, cilantro, sesame seeds, etc…

Directions
1. To make the peanut butter noodles: Bring a large pot of water to a boil and cook the rice noodles according to package instructions.
2. Add minced garlic to a saute pan with 1 tablespoon of olive oil. Saute garlic over low heat for 2-3 minutes or until golden brown. Add in the grated ginger and saute for 1-2 more minutes.
3. Remove the skillet from heat and add in all remaining sauce ingredients: 1/3 cup of hot water, peanut butter, tamari, rice vinegar, sesame oil, sriracha, and maple syrup, and whisk together until smooth. Add more water as needed to reach your desired consistency.
4. Taste and adjust seasoning to your liking with more tamari, sriracha, or other seasonings.
5. Add half of the sauce to cooked rice noodles and mix together. Adjust the amount of sauce as needed
6. Divide peanut butter noodles into bowls or plates and serve with crushed peanuts, scallions, and red pepper flakes and enjoy! ❤️

Tips for the peanut butter noodles recipe
- How much you need will depend on the brand of peanut butter you used as well as your personal preference.
- We don’t recommend adding all of the sauce at once because it may be too much depending on your preference, so start with 1/2 and add more depending on your needs.
How to keep the peanut butter noodles leftovers?
You can keep any leftover peanut butter noodles in an airtight container for 2 days in your refrigerator. Reheat in a saucepan to the microwave with a few drops of water to loosen the sauce.
