If you are like me, then you love creamy pasta sauces, but not just any pasta sauce, creamy is always at the top of my list as it always feels so luxurious and dreamy.

This sauce is delicious, garlicky and creamy!

When I first created this recipe I made the sauce separately and added in the cooked pasta at the end. But recently I've been preferring one-pot pasta dishes. Cooking the pasta in the sauce, means the starch that gets released into the water, helps the sauce to become velvety and thick and of course one pot, means less washing up afterwards, which is always a plus in my book.

This recipe has quite a bit of garlic added to it - it is a creamy garlic pasta after all. Garlic has such a lovely sweet flavour when it's cooked, so it's important to ensure you don't try to rush that part of the recipe, there is nothing worse than raw or burnt garlic in a recipe. Using spray oil means you have to be really careful with the heat under your pan. Don't be tempted to turn up the heat to try and cook it quickly, as it just won't work.

Once I fry my onions and garlic a little in the spray oil to infuse the flavour, I always then add a little water. It's a great little trick, that really helps to soften the onions and garlic without drying them out and burning. You can use this trick for all kinds of vegetables - kale, mushrooms etc. If you want more flavour, you can even use a little bit of stock instead of the water. A trick I use here with my Sauteed Garlic Mushrooms.

This is best paired up with a mixed salad, pick any salad vegetables of your choosing, baby greens, cucumber etc. Another option is to add some mushrooms, leeks or asparagus into the pasta sauce - delicious!!

One Pot Creamy Garlic Pasta | Slimming Eats

Yield: 2 servings

Cook Time: 20 minutes

Total Time: 30 minutes

This recipe is vegetarian and Weight Watchers friendly

Ingredients

  • 1 small onion, finely chopped
  • 4-6 cloves of garlic, crushed
  • 160g/5.6oz of uncooked pasta
  • 2.5 cups (600ml) of chicken or vegetable stock
  • 4 laughing cow light
  • 30g/1oz parmesan
  • salt and black pepper
  • cooking oil
  • fresh chopped parsley

Instructions

  1. Spray a deep frying pan over a medium-high heat with spray oil.
  2. Add the onion and fry for a minute until translucent.
  3. Add in the garlic and fry just to infuse flavour and then add in a little bit of the stock and continue to fry for a few mins until onions are softened. If the pan dryies out too much add a little more stock.
  4. Add the remaining stock and laughing cow and stir for about 1 minute until melted. Then add in the pasta
  5. Bring to a boil then reduce heat and allow to gently bubble for about 10-12 mins until pasta is cooked and sauce is creamy. (The key is to let the stock reduce down as the pasta cooks, and become lovely and velvety). If the stock reduces down too much and pasta is still slightly under, just add in a little water.
  6. Stir in the parmesan till melted, reserving a little for sprinkle on top.
  7. Season with salt and black pepper to taste
  8. Sprinkle with fresh chopped parsley.
  9. Enjoy!!

Creamy Garlic Pasta (original version) | Slimming Eats

Yield: 2 servings

Prep Time: 10 minutes

Cook Time: 20 minutes

This recipe is gluten free, vegetarian and Weight Watchers friendly

Ingredients

  • 170g/6oz of spaghetti (can use gluten free)
  • 1 shallot, finely chopped
  • 4-6 small cloves of fresh garlic crushed (if using lazy garlic, half the amount)
  • 4 laughing cow lights
  • 30g/1oz of parmesan
  • 1.5 cups (300ml) of chicken or vegetable stock/broth
  • salt and black pepper
  • Spray oil
  • Freshly chopped Italian parsley

Instructions

  1. Spray a frying pan over a medium-high heat with spray oil.
  2. Add the onion and fry till softened
  3. Add the garlic and fry for another 5 min (add a little bit of the stock to prevent from sticking it also helps to soften the garlic for that sweet garlicky taste)
  4. Season with some salt and black pepper.
  5. Reduce heat to medium
  6. Add the remaining stock, and laughing cow and keep whisking until laughing cow is melted, allow to simmer until the sauce reduces down and thickens, approx. 15 mins
  7. While the sauce simmers, Add the pasta to a saucepan of boiling hot water and cook till al dente, drain.
  8. Stir the pasta into the sauce.
  9. Top with some freshly chopped Italian parsley and the parmesan and serve immediately with a side salad.Enjoy!!

Notes

A healthy serving of laughing cow may vary depending on where you are i.e. US/UK/Canada so be sure to check the one you use and adjust accordingly.

I like a strong garlic flavour when I make this. If you are cooking the garlic enough. It should be a sweet garlicky flavour which is perfect. But if you don't like your garlic flavour too strong I recommended reducing the amount of garlic used.

    I've made this recipe a few times now and each time I've eaten it I always forget I'm eating a slimming world friendly recipe, it really does taste like it's straight out of an Italian restaurant kitchen!! We've added Chicken a couple of times too & although it's fantastic without, being meat & poultry lovers it's awesome With it!!

    Oh my word! This is amazing. I added spinach and courgettes and some roasted tomatoes, so delicious. I accidentally ate the two servings though so will need to sun the cheese but it’s definitley worth it! Thank you for your wonderful recipe.

      I personally wouldn't use Quark as it is sour tasting and not creamy, plus it has a tendency to split in hot dishes.

    Hi there, this looks tasty and I'm going to try it this week, however I'm confused how you are using parmesan and laughing cow and its syn free? I get one HEA can be the laughing cow but it doesn't look like the parmesan has been account for?

    Quick and easy to make
    I used dairylea as its what I had in the fridge and added a some real cheese (I like Cheese) and added some cooked chicken and ham just before the pasta was ready and it was absolutely delicious

      I wouldn't use yoghurt for this, it will split in the sauce and be sour tasting. The best option is a dairy free cream cheese.
