I love making Irish-themed food and desserts on St. Patrick’s Day. It’s a really fun and easy way to celebrate the holiday with my family. If you love making themed food on holidays, then you’ll really love this easy Irish pork stew!

Most Irish stews are made with a lot of potatoes, carrots, and beef. I made it low-carb by replacing the potatoes with turnips. I still used carrots, just not a bunch of them.

Carrots are higher in carbs, so eat them in moderation.

The Guinness beer really kicks this stew up a notch and adds a fantastic flavor to the broth!

Gluten-Free Stew

If you’re celiac or you are trying to keep all gluten out of your diet, then you’ll need to replace the Guinness with a gluten-free beer. Even though there isn’t any wheat or barley in the beer itself, there might be trace amounts in it left over from the brewing process.

Replace it with one of these gluten-free beers. Another surprising substitute for beer in stew is white wine. If you’re making stew with beef, use some red wine.

Remember to use a dry wine, because sweeter wines will have more carbs in them.

Low-Carb Pork Stew

There is a lot of room for creativity with this stew. I used pork shoulder, but you can also chop up pork loin or even some pork chops.

You can even make it with beef instead of pork! If you make it with beef, I suggest using beef broth instead of chicken or vegetable broth.

For the mushrooms and onion, use your favorite varieties of each. I love the meatiness of baby bellas, but shiitake mushrooms have a fantastic flavor. Red onions will be overpowering, so use less of it. Otherwise, I suggest using white or yellow onion.

Make plenty of this stew so that you can eat it throughout the week. It’s a wonderful choice to add to your meal prep this week. The pork and turnips soak up all the zesty flavors from the broth.

Store it in an airtight (and leakproof) food storage container and keep it in the refrigerator for up to three days.

What To Eat With Stew

If you want to eat this stew for lunch, I suggest serving some low-carb Italian breadsticks with it. I love dunking the breadsticks in the thick gravy-like stew broth.

Ingredients:

Butter
Salt and pepper to taste
Boneless pork shoulder cut into pieces
Mushrooms
Medium carrot
Turnips
Onion
Bay leaves
Guinness
Beef or chicken broth
Caraway seeds
Celery
Minced garlic
Parsley for garnish

Instructions:

1. Melt 2 Tbsp of the butter in a large pot over medium high heat.

2. Working in two batches, season the pork pieces with salt and pepper to taste, and sear on all sides in the pot. Set aside.

3. To the same pot, reduce the heat to medium and add the remaining butter.

4. Stir in the mushrooms, carrots, onions, celery and turnips. Season with salt and pepper to taste, and saute for 4-5 minutes.

5. Mix in the garlic, and saute another 30 seconds.

6. Add the caraway seeds, bay leaves, Guinness, broth and meat into the skillet.

7. Bring to a boil, then cover, reduce the heat to medium low and simmer until the turnips are softened and meat is cooked through, about 20-30 minutes.
