PICKING THE BEST KETO FLOUR TO USE

The best choice of flour for this bread pudding isalmond flour. It gives it that perfectbread-like texturewithout packing on the carbs.

But, if you're allergic to almonds or don't want to use almond flour, the best substitutes for it arewalnut flourandsunflower seed flour. They're just as low carb and can be swapped in at an equal ratio.

On the other hand, I definitelyDO NOTrecommend using coconut flour in place of almond flour. It's extremelyabsorbent, and your bread loaf will turn outdryandcrumbly if you end up using it.

SWEETENING THIS KETO BREAD PUDDING

Now, moving on to the bestsugar-free sweetenersfor this recipe.

I usedBrown "Sugar" Swerve for both the bread and pudding - it has thesame consistency and sweetness level as regular brown sugar but with0 carbsand0 calories.

Another great keto sweetener option you can use isLakanto's Golden Monkfruit Sweetener. It hasall the same great qualities as the Brown Swerve, and you can substitute it at a 1:1ratio.

STEP 2: MAKING THE PUDDING AND FINISHING UP

Ok, so once the bread hascompletely cooled, start tearing it into pieces. And the pieces don't have to be completely uniform in size or shape.

Next, get out a casserole dish, place the pieces of bread in it, and set aside.

Then take out a large bowl and putall of your pudding ingredients in itandwhiskall of these ingredients together untilwell combined.

Once combined, pour the pudding mixture over the bread piecesin the casserole dish and put the dish in the350°F (180°C)oven for45minutes.

Finally, when your bread pudding is ready, top it with a sprinkle of extra cinnamon for a finishing touch and serve warm.

STORING & REHEATING YOUR KETO BREAD PUDDING

So, this recipe makes 9servings worth of sweet and toasty bread pudding – just enough for a big family or a small party to finish it off!

But if you're making this bread pudding to enjoy throughout the week, you can easily store your leftovers in an airtight container in thefridgefor up to5days.

And if you want to save some of it for a rainy day, you can store it in thefreezerfor up to3months. Just wrap the bread pudding tightly in plastic wrap and transfer it to an airtight container for freezing.

Now, to recreate that hot out of the oven experience, you can reheat your bread pudding in themicrowaveoroven.

Heat it in the microwave at10-20second intervals until completely warmed through, or bake it in the oven at350°Ffor about10minutes.

The oven method results in aslightly better texture, but the microwave method is a littlequicker. Either way, your bread pudding will still come out delicious!
